The other day, I showed you how to make prepare the grapes and to boil them down to make juice. This next blog will describe the next step in the process to make some Wild Grape Jam-Jelly. I call it “Jam-Jelly” because it’s smooth like jelly but has all the pulp and goodness of Jam. Using all the ingredients I list, it should turn out like mine does. If you use a different kind of pectin, it may come out different – so follow the directions on the box for the amount of sugar, juice and pectin ratios.
You will need:
- 4 cups of Wild Grape Juice that you already prepared following Part One of my last blog
- 7 cups of sugar
- 1 package of Certo Liquid Pectin
- Dab of butter (to control foaming as it boils).
- Deep pot of boiling water. (For water bath.)
Cut Certo package top and rest in coffee cup.
This makes it much easier to pour out when the jam is boiling on the stove and you need another hand or two to get it all done together.
Take four cups of the cooled juice in that bowl you just prepared and add to a large pot. Add the 7 cups of Sugar. Stir until dissolved.
Set on stove and cook on medium-high heat. At this time, add a dab of butter to the pot. Stir constantly until it comes to a rolling boil. Turn down the heat just a bit – so it doesn’t over boil.
Take the certo package that you cut and pour and squeeze out as much as you can into the boiling mixture stirring as you pour it in. It should stop boiling for a second or two. Continue stirring until the mixture comes to a full boil again. Time it and stir for 1 minute.
Shut off the stove and pour into prepared jars, seal with lids and rims. Add to pot with boiling water.
Make sure the water is over the lids. Boil filled jars for 15 minutes. Remove from heat.
Let cool on a rack. You should hear each lid snap as it cools. When that happens, you know it’s sealed and can last about 2 years. If it doesn’t snap, take apart, clean jar tops, lids and seals and put back on. Give another water bath for another 15 minutes. Recheck when done. Label and Whalla! You’ve got great tasting Jam-Jelly to enjoy for a couple of years!
